Being away at culinary school I get to enjoy some very delicious food however, there is nothing that really compares to my mother's cooking.
Naturally, some of my mom's food is much better than any three course meal I could ever have. I am sure anyone could say the same about their mother's or grandmother's cooking. Last weekend, I was sick and I knew the only thing that could make me feel better was my mom's chicken soup. So I got in my car and drove 5 hours back to Maine for a little TLC and soup of course! I will swear on anything that my mom's soup has magical healing powers because by the first few bites, I was feeling 100% better. It's such a simple soup but the kind of love she mixes in with it is special. She starts off with a whole chicken, water, standard mirepoix, and seasonings like salt, pepper and bay leaves. After a few hours of simmering she removes the chicken and cleans all the meat from the bones. She then puts in a variety of vegetables like; carrots, onions, peas, and celery. Depending on how much broth she got from the chicken she will add an additional quart of chicken broth, add secret seasonings (which she will not reveal!), and salt and pepper. She continues to let it simmer for about an hour. Sometimes she will also either add some small noodles or rice into the soup.
When you're not feeling well I highly recommend you find my mom, ask her to make you some of her soup, and guaranteed you will feel better sooner. This soup is one of my many favorite things that my mother makes. Whenever I go home you would think I always do the cooking but my mom and I tend to split the cooking 50/50. Sometimes it's nice to be the one sitting at the kitchen counter watching the other cook. I love watching her cook in the kitchen; that is where we have the most fulfilling conversations and I learn something new from her every time.
I would take a simple home-cooked meal from my mom over any Hudson Valley Foie Gras Terrine with a sour cherry compote, truffle shavings, and toasted brioche bread any day!
