Happy Holidays! I am so fortunate to be spending my holiday season with my family and friends in Maine. After spending the last few months in California I am so excited to be back on the East Coast and spending some much needed family time here in the Pine Tree State! This Christmas I decided to make a rolled pork loin filled with dried cranberries and apples paired with my favorite sauce to have with pork, my warm apple and tomato sauce. It was a huge hit, super easy to make, and of course nothing but delicious!
Overall so far my holiday season is very merry and bright! In a few short weeks I will be headed back to the Hyde Park campus to finish my last semester at the Culinary Institute of America. I am looking forward to my graduation in April and to what my future has in store.

Ingredients:
2 Pound Pork Loin
1/2 c Dried Cranberries, chopped
1/2 c Butter, room temperature
1/4 c Fresh Basil, finely chopped
1 ea. Macintosh Apple, peeled and thinly sliced
2 tbsp. Dried Oregano
Salt and Pepper
Olive Oil
Directions:
1) Preheat oven to 350 degrees.
2) Place pork loin vertically on cutting board. Butterfly the pork loin by holding the knife blade flat, so that it’s parallel to the board. Then make a lengthwise cut into the center of the tenderloin, stopping short of the opposite edge so that the flaps remain attached. Open the loin and take a meat mallet covered in plastic wrap and pound pork to an inch and a half thickness.
3) In a small bowl combine butter, 1 tsp. salt, and 1 tsp. pepper and mix together until smooth and creamy. Then smother the inside of the pork loin with seasoned butter. Take the chopped basil and sprinkle on the pork.

4) Next evenly sprinkle on the chopped cranberries and layer apple slices onto pork.
5) Take one end of the loin and and carefully roll towards the other end. Place on the cutting board seam side down. With kitchen twine tie the loin by sliding twine underneath and tying very tightly with a secure standard knot. Space out each tie about an inch to an inch and a half apart depending on length of pork loin.
6) In a large pan over high heat place 1 tbsp. of vegetable oil. Sear pork on each side until golden brown, about 3-4 minutes. If you are using a pan that is safe to go straight from the stove top to oven place into oven. If not, transfer pork loin to a oven safe pan.
7) After 20 minutes in the oven pour the apple tomato sauce over the loin and return back to the oven for an additional 15-20 minutes or until the pork reaches an internal temperature of 140 degrees.
8) Remove pork from oven, cover with tin foil, and let rest for 5-8 minutes. Cut and remove twine from pork then slice pork to desired thickness and serve with apple grilling sauce .

1 ea. Yellow Onion, chopped
1 clove Garlic, minced
3 tbsp. Granulated Sugar
1 8oz. can Tomato Sauce
1/4 c Apple Cider Vinegar
3 tbsp. Molasses
1/8 tsp. Nutmeg
1/8 tsp. ground cloves
1/4 tsp. Cayenne Pepper
Salt and Pepper
Olive Oil
Directions:
1) In a medium sauce pot over medium-high heat, heat 2 tbsp. of olive oil. Add onions and sweat until translucent, about 4-5 minutes. Then add garlic and cook until aromatic, about 2 minutes.
2) Add in diced apples and season with salt, pepper, and sugar. Constantly stir and cook until apples are soft and tender, about 20 minutes.
3) When apples are soft add in the tomato sauce, apple cider vinegar, molasses, and dried spices. Allow sauce to come to a simmer. Turn off heat and blend using an immersion blender or a regular blender until sauce is smooth and all apples, onions, and garlic are pureed.
4) Using a fine mesh strainer, strain sauce to remove any impurities, making the sauce velvety smooth. Taste for seasoning and adjust as needed.
5) Sauce can be used right away or cooled and stored in the refrigerator for up to one month.
